Suggest a better descriptionUnder plastic wrap, flatten 2 boneless, skinless chicken breasts to twice their size. Season with salt and pepper. Dust both sides with flour. Sauté, one at a time, in 1 tbsp hot EVOO until browned on both sides (keep warm).
In same pan on medium, sauté in 2 tbsp butter (mushrooms, tomatoes, tarragon, garlic and pepper). Cook 2 minutes. Splash with 1 tbsp lemon juice.
Spoon over chicken and serve with rice pilaf and steamed asparagus.
