combine sauce ingredients in a bowl
put oil in a fry pan and cook the carrot and beansprouts on medium heat for 1 minute. add chicken and cook 1 minute more.
add sauce, increase heat to high, and sautee 1 minute.
turn off heat, add green onion.
garnish with cilantro, lime, etc. to taste
