Lay chicken out to distribute spinach mixture evenly onto the center. Fold the chicken over the filling, secure with toothpicks. Stir together flour, salt nda pepper. Roll chicken in flour to coat. Heat oil in skillet med-high heat. Quickly brown the chicken top and bottom. Remove to a lightly greased baking dish, cover with aluminum foil. Bake for 30 min.
