Chop chicken breasts into 1/2-inch cubes. Add 1/4 cup chicken broth and olive oil to a large saucepan and heat over medium-high heat until hot. Add cubed chicken, and saute, stirring frequently, for about 4 minutes or until white and firm to touch. Lower heat to medium. Add onion and garlic. Cook, stirring frequently, until onion is soft and transparent, about 8 minutes. Add red pepper, green chilies, tomatoes, tomato paste, chili powder, oregano, 1 cup chicken broth, cornmeal, and salt. Stir well to combine. Bring to a boil. Lower heat, and simmer, uncovered, stirring occasionally, for about 30 minutes or until chicken is tender.
