Emma O'Donnell's recipe
Wash chicken pieces and pat dry. Season with salt and pepper. In large skillet, brown chicken in oil. Remove chicken. Pour off all but 3 tbl fat. Add onion and garlic. Cook and stir until onion is tender. Stir in chicken and remaining ingredients (except spaghetti and cheese). Cover and cook slowly for 60-90 minutes, stirring occasionally and adding water if necessary. Skim off excess fat. Serve on spaghetti, sprikled with Parmesan.
