Preheat oven to 375 degrees.
In large skillet or medium heat butter, then add whole chicken breast. Once cooked, shared chicken. Add potatoes and spices. Cover pan, cook until potatoes are done. (Adding small amounts of water or chicken broth if necessary)
Wrap tortillas in hand towel, microwave for 2 minutes.
In large cake pan, pour enough enchiladas sauce to coat bottom of pan.
One by one, put chicken mix and a good pinch of cheese in tortilla. Roll and set in pan. Once finished smother with sauce. (I personally like a lot of sauce) then cover with cheese.
Place pan in oven and cook for 20-25 minutes until cheese is slightly golden.
Let cool for 10 minutes and enjoy!
