Great way to use cooked chicken.
1. Cook chicken in advance. You can cook on the barbecue or use roasted or broiled chicken. Cut the chicken into small bite-size pieces.
2. Heat oil in large skillet or frying pan, then add onion and pepper pieces, frying on medium heat for about 3-5 minutes until the pieces are going a little soft. Add the chicken pieces and salsa, cover and simmer on medium low for another 5 minutes, stirring occasionally.
3. Heat oven to 350 degrees, and wrap your tortillas in foil, heating them for 5 minutes.
4. Take a tortilla and spoon fajita filling in the middle, leaving space on the bottom so that you can fold up when eating.
5. Top with shredded cheese and sour cream before folding up and eating.
