This is a real comfort food which you can make in bulk and re-heat in the micowave
1. Bake your potatoes whole either the oven or smoker at 240c for approximately 40 minutes (or microwave for 10 min)
2. Cut the potatoes in half and scoop about 1/3 of the flesh out, set aside
3. Brown chicken in fry pan over medium heat
4. Add the rest of the filling ingredients including the potato flesh and cook simmer approx 10 min, til all ingredients are cooked through
5. Scoop the filling into the potato shells and top with cheese
6. Place bake in oven for 10min until cheese is melted
7. Top with sour cream and chives
If you like bacon then fry some up and throw it in, if you don't like bacon then go see your doctor as there is something wrong with you
Serve with a fresh garden salad
