Suggest a better descriptionmelt 15 gm butter in large frying pan on medium/low; add chicken livers and cook for 2-4 mins each side they should be slightly pink on inside; put livers in food processor bowl; melt further 15gm butter in same pan, add shallots and garlic cook for 6-8 mins; tip in thyme, port, brandy and cook until liquid has reduced to approx 2 tablespoons; add this to the chicken livers and whiz together until smooth; allow to cool completely; cut remaining butter into cubes and add to mixture, whiz together again and season to taste with salt and pepper; spoon into bowl, cover with clingfilm. serve at room temp.
