Very nice chicken breast dish.
Skin bone and flatten chicken breasts to 1/4 inch thickness.
Combine Eggs, Half and half and Parmesan in shallow bowl. Set aside. Coat chicken breasts with flour, shake off excess.
Heat oil until haze forms. (Use skillet large enough to accomodate all chicken breasts) Whisk egg mixture and dip breasts to coat evenly. Add chicken to skillet then reduce heat to low and saute slowly until golden brown, turning occasionally to cook evenly. Remove to heated serving platter and keep warm.
Drain off all but light film of oil. Return skillet to burner and reheat. Deglaze by adding remaining ingredients, stirring with wooden spoon to mix and loosen any browned bits clinging to pan. Continue cooking over medium heat until sauce thickens. Stir briefly, then spoon over chicken. Serve with Rice.
