Make yourself a soup pot of chicken noodle soup! A great sign of fall...
I buy a roasting chicken and cut it into 4ths. Put in pot, cover chicken with water and boil with three bay leaves until chicken is very tender. Remove from pot and let cool long enough for you to handle it to remove skin, bones, fat and pull it apart and rip chicken meat into bite size pieces. Skim any scum off water as you are cooking chicken. You can't get it all, but I do try to remove some of it.
Take out bay leaves. Add a couple of cans of chicken broth. Add enough salt to taste. Put chicken back in to pot and add two large chopped carrots, two splines of celery, and some onion flakes. I put the vegetables in my food chopper so they are chopped quite small. Simmer until veggies are done. Taste - if additional salt is needed add. Now put in 8 oz. of frozen Reames Noodles. Simmer again until noodles are done. If it gets too thick you can add more broth.
