Step 1: Chop up carrot, onion, and celery. Put vegetables in stock pot over medium heat. Heat vegetables until they become softened.
Step 2: Add garlic, thyme, and bay leaf. Continue to let vegetable mixture soften over medium heat.
Step 3: Add chicken broth. Bring to a rolling boil. Reduce heat and let simmer 10-15 minutes.
Step 4: Add Rotisserie Chicken and Egg Noodles. Cook until noodles are desired doneness.
Step 5: Add Soy sauce. Salt and pepper to taste. Garnish with parsley flakes.
More chicken broth can be added to achieve desired consistency.
