Put chicken, water, salt, onion, peppercorns, 3 stalks of celery & 3 carrots in post and boil. Skim the foam off the top and reduce heat to simmer. Cook 2 hours.
Remove meat and throw veggies away.
Strain the juice and chill till fat comes to the top. Remove the fat.
In a pot, cook diced carrots & celery in the stock. Add meat, noodles, and parsley.
Delicious on a cold afternoon!
