Coat bottom of pot with thin layer of oil and heat. Flour the chicken pieces and brown them in the oil. Remove them to a plate.
Stir all other ingredients into the pot. Stir around and scrape up any brown bits sticking to the pot.
Put chicken back in pot and spoon sauce over the pieces. Simmer about 15 minutes.
Add mushrooms (a layer on top of chicken). Simmer 10 minutes.
Drain peach halves (Elberta peaches, not clingstones) and arrange on top of everything. Simmer another 15 or 20 minutes.
We serve with Browned Rice*, although grits have been mentioned as a possibility.
