Suggest a better descriptionRinse chicken breasts under cold water & pat dry with paper towels. Place each breast between two sheets of wax paper or plastic wrap. Pound to 1/4 inch thickness, sing a heavy mallet or large rolling pin. Trim ragged edges.
In a shallow dish, mix bread crumbs, oregano, parsley, basil , salt & pepper. IN a separate shallow dish, beat eggs. Dip each piece of chicken into beaten egg and then into seasoned bread crumbs, coating completely.
In a large non-stick skillet (I use cast iron), heat oi over medium-high heat. When oil is hot, reduce to medium. Add chicken breasts, in batches, if necessary, and saute until golden brown & tender, about 3 to 5 minutes on each side. Remove chicken to a heat-proof platter & keep warm in preheated oven.
Add wine to skillet and let simmer, scraping bottom of pan to mix in bits of chicken stuck to pan. Add chicken stock, lemon juice & capers. Bring to a boil, reduce heat to low & simmer 15 min. Taste & adjust seasonings.
Place chicken on bed of Angel hair pasta & poor sauce over chicken & garnish with minced parsley. Serve immediately.
