Cut the chicken fillets in half horizontally. using paper towels, pat the chicken dry and then lightly season with salt and pepper. combine the cheese and flour in a bowl and then coat the chicken in the flour mixture and set aside.
in a large skillet, over medium high heat, add in the butter and olive oil. once completely melted, add in the chicken, 2 at a time, cooking for 3-4 minutes on each side. remove from skillet and keep warm. using the same pan over medium high heat, add in the garlic and cook for 1-2 minutes or until fragrant. reduce to low medium heat, add in the heavy cream and the chicken stock. mix well, bring to a simmer then add the cheese and capers.
let cook for an additional 2-3minutes or until slightly thicken. add in the juice of 1 lemon and mix and put the chicken back in the pan. let simmer with the chicken for 2-3 minutes. plate the chicken and garnish with lemon rounds and parsley. serve immediately.
