Lunch snacks with leftover mashed potatoes
1) Mix mashed potatoes, baking powder, flour and parmesan to form a dough
2) Roll out mixture to 1/2 inch thick
3) Use a cup to cut out circles
4) fill potato with mozzarella, chicken and top with another potato circle
5) Fry to a nice golden brown
I hold the first potato in my left hand so it makes a half circle and then fill the pocket with cheese and chicken only slightly over filling. Top with the second potato circle and press the edges together so they form one piece
