This is a Mandie approved dish, a simple chicken quesadilla.
Cut thawed chicken into small pieces, size to liking. The chicken is easier to cut if it is still partially frozen.
Dice onion into small pieces.
Simmer chicken, oil, salt, pepper, and onion in a frying pan until chicken is cooked.
Drain oil from pan. Set the chicken and onions together on the side.
Turn the stove to medium high and melt the butter in the frying pan.
Place one flour tortilla in the frying pan. Cover with shredded cheese, chicken, and onion to taste. I prefer lots of mozzarella and a little bit of chicken myself.
Cover with the other tortilla. Cook both sides until golden brown.
Serve with salsa on the side. Enjoy!
Change the recipe to taste. This isn't exact but it is easy and does taste very good.
