Tie legs of chicken together, tuck wings underneath.
Brush chicken with combined lemon juice and pepper.
Place bay leaf and thyme inside chicken.
Place chicken breast side up in baking dish (turbo broiler) place garlic cloves around chicken.
Pour oil over chicken and garlic.
Cover chicken with greased foil (but into turbo, no need to cover with foil), bake in moderate oven 30 minutes (but if in turbo, cook at 200 degrees for almost an hour).
Remove foil, stir garlic, bake further 1 hr and 15 mins or until chicken is tender and garlic is soft; stir garlic occasionally.
