2 tbsps salad oil
2 tbsps lemon juice
1 ¼ tsps salt
¾ tsp ground cumin
½ tsp fennel seeds, crushed
Peanut sauce (below)
3 medium-sized nectarines or 2 large mangos, cut into bite-sized chunks
ABOUT 40 MINUTES BEFORE SERVING:
Soak about (16) inch long bamboo skewers in water at least 15 minutes to prevent charring when broiling. (Metal skewers can also be used. Spray them with cooking spray.) Cut chicken breasts lengthwise into ½ inch wide strips. IN large bowl, combine salad oil, lemon juice, salt, cumin, and fennel seeds. Add chicken strips and toss to coat; set aside.
Prepare peanut sauce; keep warm over very low heat. (Sauce may separate if too high heat is used).
Preheat broiler. Lightly grease rack in broiling pan. Thread chicken strips and fruit onto skewers, intertwining fruit with chicken strips on each skewer. Broil 4 minutes; turn and broil 3 minutes longer, or until chicken loses its pink color and is fork-tender. Serve with peanut sauce. Makes 4 servings.
PEANUT SAUCE
In 2 quart saucepan over medium heat, in 2 tbsps hot salad oil, cook 1 medium sized onion, minced; 1 garlic clove, minced; and 1 tsp grated peeled gingerroot or ½ tsp ground ginger until onion is very tender, stirring frequently. Stir in ½ cup water, 2 tbsps soy sauce, and 1 tbsps lemon juice; over high heat, heat to boiling. Remove saucepan from heat; with wire whisk, beat in 1/3 cup creamy peanut butter until melted and smooth.
