Chicken with lemon scampi sauce and pasta
Fill a large pot with water for the Pasta. Once water is boiling, add the pasta and stir while cooking.
While Pasta is cooking, in a separate 12 inch saucepan, melt Butter and Olive Oil. Add garlic and green onions and saute for two minutes.
Add juice of the lemon, salt, pepper and chicken strips into the saucepan and simmer for five minutes or until chicken is cooked through.
Add the can of chopped canned tomatoes and parsley and heat through.
Once pasta is cooked (approximately 10 minutes), drain pasta. Put a 1/3 cup portion of drained pasta onto each individual serving dish and top with Chicken Scampi mixture.
Serve immediately. For added flavor, grate a small amount of parmesan cheese on top of the Scampi and Pasta.
