Suggest a better descriptionIn a large bowl mix together the shredded chicken, cream cheese, sour cream, salsa, and shredded cheese (and spinach if using). Add salt and pepper to taste. Mix thoroughly until well combined.
Heat 1/2 inch deep oil in a sauce pan on medium heat until temperature reaches 350°F stable. Once oil is to temp, spread a roughly 1/8 inch thick layer of chicken mixture onto tortillas evenly. Roll up and set seam side down in oil using tongs.
Cook until golden brown on both sides, repeat until all tortillas are filled, rolled, and fried.
Set on paper towels to drain and then serve.
