Season chicken well with salt and pepper. Melt butter in skillet on Medium. Add chicken and sear on each side on medium high for about 3 minutes each side until golden. Reduce heat to medium and cook until cooked through. Place chicken on a plate.
Deglaze with white wine. Cook over medium until reduced by half.
Add heavy cream and bring to low boil. Reduce heat and add mustard and parsley or tarragon. Stir.
Season to taste. Sloosh chicken in sauce and serve.
