Suggest a better descriptionTo make the chimichurri, puree the cilantro, parsley, vinegar, lime juice, oil, garlic, four teaspoons of salt, and the crushed red pepper in a food processor or blender. Transfer to a bowl.
To make the salsa, combine the jicama, tomatillos, avocado, and onion in a medium bowl. Add half of the chimichurri and toss to coat. Set aside.
Spray a non-stick ridged grill pan with a non-stick spray and set over medium-high heat. Season the steak with the remaining 1/4 teaspoon salt. Sear the steak until browned, 3 to 5 minutes. Turn over; cook until done to taste, 5 to 8 minutes longer for medium. Transfer the steak to a cutting board; let stand 5 minutes. Thinly slice the steak across the grain, then arrange on a platter. Drizzle with the remaining chimichurri and serve with the salsa.
