Whole chicken soup with ginger, scallions, tomato and mushrooms
Break chicken down into 2 quarters, 2 wings, 2 breasts, and the spine.
Bring to boil in a large pot, reduce to simmer, cover and let sit for 30-40 minutes.
Remove breasts and spine. Skim scum off top of soup.
Shred breast-meat and pick off spine meat, and place back in soup.
Add scallions, ginger, and tomato.
15 minutes before serving, add sliced mushrooms.
Crack fresh black pepper right before serving. Salt to taste.
