I call it Chinese Quesadilla because of the Hoisin Sauce which can be found in Oriental Grocery Stores and most supermarkets

Preheat oven to 400 degrees
Place the onions, chopped tomato and bean sprouts in a small bowl and toss gently.
Heat a non-stick skillet sprayed with Pam until hot. Add the diced turkey and saute until just browned and hot. Remove from heat and add Hoisin Sauce. Toss gently til turkey is coated with the Hoisin Sauce.
Place one tortilla on a non-stick baking sheet and place the turkey mixture on the tortilla. Add the tomato/onion/bean sprout mixture and top with the cheese. (Spread all layers evenly across the tortilla). Top with the second tortilla.
Place in pre-heated oven for four or five minutes til tortilla starts to brown and cheese is melted.
Could be used for lunch or a light supper, but I love this as a hearty breakfast
