Suggest a better descriptionPreheat the oven to 400 degrees. Cut butternut squash in half lengthwise and remove the seeds. Place the halves face up on a cookie sheet covered with parchment paper or foil and drizzle with olive oil and add salt and pepper. Bake the squash for 30-45 minutes or until fork tender. Meanwhile, heat 2 tablespoons olive oil in a large stockpot over medium-high heat. Add the onion and cook for 5-7 minutes, add garlic and allow to brown slightly. Add celery, carrots, apple and raisins stirring to coat. Cook for 10-12 minutes. Add chicken broth and coconut milk. Add 1/2 - 1 chipotle pepper depending on how hot you like it. Pour in some of the sauce of the pepper but remember soup will get hotter than it is initially. Simmer soup.
When squash is done and cool enough to handle, scoop out flesh and add to soup. Using an emulsion blender, blend soup until it is pureed. This can also be done in a food processor or blender in batches. Add salt & pepper to taste. Serve in bowls in a little parm cheese or a dollop of sour cream.
