Heat saute pan with lid at medium, add oil. Sear sausage on all sides, add onion and garlic. Add beer and to pan, turn heat down to low until sausage is cooked through, for about 15 minutes.
With a blender, blend chipotle peppers and heavy cream (about 5 seconds). Add salt to water and boil potatoes until potatoes are tender and strain. Return to pot and stir in cheese, butter, and Chipotle heavy cream mixture. Mash by hand for a chunkier mash or whip with an electric beater for a creamier mash, then keep warm. Season the mash to taste.
Spoon some mash in the center of serving plate. Top with sausage and with some braising liquid.
