Mix spice mash in food processor.
Dry, flour and season beef
Sear and remove from pan
Reduce heat very low
Cook onion for 15 mins until soft, golden
Put onion in bottom of Dutch oven
Meat on top of onion.
Deglaze pan with stout
Add spice mash, cook for a few mins
Add stock & tomatoes; bring to boil
Add to Dutch oven.
Scrunch parchment under water, shake off excess water and tuck beef in.
Cover and put in oven for 5-6 hours.
Turn every so often.
Ready when you can easily pull apart with 2 forks.
