Like a pot roast but no potatoes. Carrots and green beans on side
Preheat a large pan, add 3 tablespoons olive oil or enough to cover bottom of pan
Generously sprinkle salt, pepper, chili powder, and about half as much cumin on both sides of roast.
Sear roast on med high heat on all sides in olive oil
Remove meat and set aside on platter
Reduce heat to medium , Add onions and peppers to remaining oil
Cook, stirring occasionally, until onions begin to brown.
Remove onion mixture and set aside
Add butter and 1 t olive oil to same pot and stir to melt. As butter begins to sizzle start adding mushrooms a little at a time.
Turn heat up to med high, cook mushrooms until slightly tender and liquid begins to cook off, stirring occasionally
Stir in garlic and cook one more minute
Add wine and cook until mushrooms tender, about 3 - 5 minutes
Add roast back to pot, tipping pan so Meat will rest on bottom with most of mushroom mixture spilling to top when pan is righted.
Add onion mixture
Place rosemary and thyme on top
Pour broth over top
Bring to boil, cover, reduce heat to simmer for 3 hours or until meat tender
