Add the oil to a medium-sized non-stick saucepan and place over a medium heat. Add the pancetta and fry for 2 min, followed by the onions. Leave to sweat for about 4-5 min, stirring occasionally.
Add the carrot and stir to mix with the onion. Cover and leave for another 4-5 min, shaking the pan occasionally to prevent sticking.
Add the lentils and tomatoes (along with ther juices), then the stock. Bring to the boil, then reduce the heat so the soup simmers steadily.
Cover the pan and leave for 10-15 min, or until the lentils have collapsed and the vegetables are soft.
Season the soup with black pepper, then ladle into warmed serving bowls.
Sprinkle with the parsley and serve.

Adaugati uleiul intr-o crati?a non-stick ?i se puna pe un foc mediu. Se adauga pancetta ?i se praje?te timp de 2 minute, urmat de ceapa. Se lasa sa se prajeasca timp de aproximativ 4-5 minute, amestecând din când în când.
