1. In 10" dutch oven or deep cast iron skillet, heat 2 T olive oil over medium heat and cook the fennel, onion, apple and maple syrup until lightly caramelized, about 15 minutes.
2. Add 2 T of the vinegar and 1/2 tsp salt and stir scraping up any browned bits from the pan. Transfer the mixture to a small bowl and carefully wipe out the pan with a paper towel.
3. Add the remaining 1T oil and increase heat to medium high. When oil is hot add the sausages and cook until browned all over - 4-6 minutes.. Reduce heat to medium low and add the cider. Simmer until the sausages are cooked through and the cider has reduced and and thickened - 6-10 minutes, flipping the sausages once or twice.
4. Return the apples fennel and onion to the pot with the remaining 2T vinegar. Toss to coat them with the sauce. Season to taste with salt and pepper and sprinkle over the parsley. Serve right from the pan.
