Olive Oil
1 small Onion chopped
3 - 4 toes minced or mashed garlic
1 Bell Pepper chopped
1 small can Tomato Paste
28 oz can Crushed Tomatoes
2 - 14oz cans Tomato Sauce
1 cup Wine (I use Moscato because I like a sweet sauce, but some people prefer to use red wine)
1 tsp Oregano
1 Tbsp fresh Basil (or 1 tsp dried)
1 tsp. Fennel seeds
1/2 tsp Nutmeg
1/2 tsp. Ground Red Pepper flakes
1 Tbsp Sugar
Salt & Pepper to taste
Grated Parmesan Romano Cheese to taste
Water added if needed
Select for Optional Meat Choices:
* Ground Meat - Crumble & Browned
* Meatballs
* Italian Sausage
DIRECTIONS:
Saute Onions, Bell Pepper & Garlic in olive oil until soft but not brown. Add tomato paste, mix in and then fry one minute. Stir in crushed tomatoes and tomato sauce. Add wine and sugar. If needed add enough water to desired consistency and simmer. Add all seasonings - Oregano, Basil, fennel, nutmeg, red pepper, salt & pepper. If you're making a meatsauce and/ or with meatballs, add cooked meat at this time. Continue to simmer for total of about 45 min - hour. Add cheeses about 15 - 20 before done.
