The best hummus you've ever had. I never liked hummus before but I'm addicted to this.
Put unpeeled garlic on a cookie sheet and bake at 350 for about 5 minutes (toaster oven works great for this). Peel and add to other ingredients (except olive oil) in a food processor and blend. Pour olive oil in a thin stream while processing until it forms a smooth paste.
Tip: I make my own tahini by processing sesame seeds with a little olive oil in a food processor; it keeps indefinitely in the fridge in a glass jar. I also roast garlic cloves ahead of time and keep in the freezer so I can make this hummus super-quickly.
