When you think of Gingerbread, you probably imagine a crispy cookie in the shape of a tiny person. But this classic gingerbread is anything but. It's a rich, soft cake loaded with warming ginger and plenty of seasonal spice. We added a touch of cocoa to bring a richness to this winter staple.
1. Preheat the oven to 325 F and line an 8 inch square baking pan with parchment paper.
2. Sift the dry ingredients into a bowl. In a second bowl, cream together the butter and brown sugar until very soft and fluffy. Add one egg at a time and mix until combined. Add the molasses or treacle and mix until just combined. Gently fold in the dry ingredients 1/2 at a time.
3. Pour the mixture into the prepared baking dish, and bake for 50-60 minutes or until a toothpick inserted in the middle comes back clean.
4. Cool in the tin, then cut into cubes and serve with butter, whipped cream, or on it’s own.
