In lrge bowl, mix w/ mixer on med speed butter, sugar, orange peel & vanilla until smooth. In med bowl mix flour, baking powder, salt. Add to butter mixture, beat on low until dough comes together, about 5 minutes. Mixture will look dry/crumbly until comes together. Mix in cranberries & coconut. Shape dough into 1” balls & place about 2” apart on buttered cookie sheets. Bake at 350 8-11 minutes (shorter time makes chewier cookies, longer time crispier).
