1. Dry roasting: Heat the pot to medium temperature for 2 minutes then roast the cumin and coriander seeds until they pop and start releasing their aromas (around 1 minute). If they don't pop, turn off the heat as soon as the aromas get released. Be careful not to burn the seeds, which will make the soup taste bitter. Grind the seeds using a mortar and pestle and set aside in a bowl.
2. Water sweating: Turn on heat to medium, power water into the pot to cover the bottom, wait for the water to sizzle, turn heat to low then sweat the onions with a pinch of salt for 15-20 minutes until translucent. Stir occasionally and add 2 tbsp of water whenever pan dries up.
3. Turn up heat to medium, add ginger and cook for 2 minutes.
4. Add water and lentils, bring to boil and cook to medium heat for 10 minutes. Remove the foam that floats on top. Cover with a lid and stir occasionally (every 5 minutes). After the 10-minute mark, mix in ground spices (cumin and coriander), salt and pepper and cook for another 10 minutes or until the lentils have completely broken down. Partially cover the pot and stir occasionally.
5. Turn heat to low, add coconut milk, and cook for 10 more minutes without a lid. Stir occasionally.
6. Turn off heat and add lemon juice and cilantro, saving some for garnish. Adjust salt as needed.
7. Serve hot in bowls. Garnish with cilantro.
