Fry bacon in a medium skillet until nice and crispy (or do in oven on cookie sheet!) Remove bacon to drain on a towel-lined plate. Place diced onion in the skillet with the bacon drippings and cook until the onions are soft and translucent (do not brown) about 5 minutes.
Place the Saltines in a large Ziploc baggy and smash them in to small crumbs.
Add the bacon, onions, both cans of corn, cream cheese saltine crumbs, eggs, milk and cayenne pepper to a mixing bowl and stir until well combined. Pour into a 2 quart buttered baking dish and sprinkle paprika on top.
Bake for 50 minutes or until the center is mostly set and the top is starting to brown.
