This is such an easy and quick recipe to pull together with delicious results. Slightly sweet these are great for breakfast but we also like them with chili, tomato soup, and as a snack.

1. Preheat oven to 400 F.
2. Generously coat a 12 cup muffin tin with cooking spray.
3. Whisk the cornmeal, flour, baking soda, baking powder and salt together in a large bowl.
4. In a separate medium sized bowl, whisk the eggs and sugar together until combined.
5. Add the melted butter, sour cream and milk to the eggs and sugar and mix until smooth.
6. Gently fold the egg mixture into the flour mixture with a rubber spatula, until just combined. Do not over-mix or muffins will be tough.
7. Measure batter evenly among the muffin cups. Do not level or flatten the surface of the mounds.
8. Bake until light golden-brown and a toothpick inserted in the middle of the muffin comes out with just a few crumbs attached (about 18 minutes).
9. Let the muffins cool in the muffin tin for 5 minutes, then flip out onto a wire cooling rack to let cool 10 minutes before serving.
