Chicken Breakfast Patties
In a large bowl, combine chicken, salt, sage, black pepper, black pepper, cayenne pepper, sugar, and marjoram. Cover and chill at least two hours.
Form 16 patties and roll each one in the breadcrumbs. Place the patties in a single layer on a parchment-lined baking sheet. Cover and freeze. When frozen, remove from sheet, wrap in plastic wrap or foil and place in plastic freezer bag or plastic storge box.
Cook the sausage patties frozen or thawed. Heat a large skillet orver medium high heat and add several taqblespoons of olive oil. Add the frozen or thawed patties and cover the skillet. Cook until the bottom is browned. Turn and cook the other side a minute or two. Cover, turn off heat, and let sit until you are ready to serve, but not more than 10 minutes. Be sure to cook until it is done but not overdone.
