Couscous is a great side dish and this one is easy to make and yummy.
Place the couscous in a medium-sized bowl. Stir in the boiling water. Cover and let stand until the liquid is absorbed, about 5 minutes.
Meanwhile, melt the butter in a small skillet. Add the dried fruits and toasted almonds. Stir and let cook for a minute or so until heated through.
Add the fruit and nut mixture to the couscous. Mix well.
