Great deviled crabs
1) Chop celery, green onions, and garlic medium fine.
2) Drain crabmeat in colander. Be sure to remove any shells.
3) Crumble crackers very fine in a large mixing bowl.
4) Saute celery, green onions, parsley, and garlic in a stick of butter until tender.
5) Add crabmeat and mix well. Add more butter if a little dry.
6) add Worcestershire sauce and lemon juice and heat and stir for 5 minutes.
7) add the sauce to the crumbled crackers slowly
8) Add half and half gradually and mix until malleable consistency is achieved.
9) Form into balls and bake at 350 degrees until starting to brown. Should be 15-20 minutes but maybe more.
10) sprinkle with Paprika to visual satisfaction.
If you refrigerate the mixture for 45 minutes it will not be as sticky.
Should make 2-3 dozen balls
