Combine boiling water, cracked wheat, brown sugar, butter and salt.
Cool until warm
Soften yeast, and combine yeast and warm water with the above mixture
Beat in as much flour as you can, then knead in the rest
Knead 8-10 minutes
Let rise 1 1/2 hours
Punch down, divide in two, let rest 10 minutes
Roll each piece into a 12x16 shape, then roll up jelly-roll style into a 12" loaf
Pinch ends and tuck under
Let rise 1 hour on a greased cookie sheet
Bake at 375° for 30 minutes
This is so yummy fresh out of the oven, or later when cooled, and the next morning as toast!

Sliced cracked wheat bread, thinly sliced rare roast beef, garden fresh sliced tomatoes, dollop of homemade mayo and topped with dill weed
