If you like cranberry nut bread - these are for you. Delicious goodness with no refined sugars.
In mixing bowl thourghly combine honey and butter using whisk. Mix in egg and spices. In seperate bowl, combine flour, soda, salt, and oatmeal. Gently whisk into wet ingredients just until moistened. Fold in cranberries, walnuts and coconut. Dough will be fairly wet.
Drop onto cookie sheet 2-3 inches apart. Bake 375° for 10-13 minutes. Remove from cookie sheet to wire rack. To cool.
Yield: 2.5 dozen using medium Pampered Chef scoop.
Do not use mixer or overheat.
