Cut a pocket into each chicken breast horizontally. Take care not to slice the chicken through.
Stuff the pockets with the sliced Brie, cranberry sauce and thyme.
Wrap the breasts in the courgette ribbons, closing the pockets.
Put the chicken on a baking tray. Drizzle with olive oil, season and cook in oven for 20mins.
Meanwhile, make up couscous as per packet instructions. Fork through the chopped parsley and season.
Slice chicken diagonally and serve with couscous.
