Instructions:
1. Prepare the Cake:
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
2. Sift Dry Ingredients:
In a bowl, sift together the flour, baking powder, and salt. Set it aside.
3. Cream Butter and Sugar:
In a separate bowl, cream the softened butter and granulated sugar together until light and fluffy, which may take about 2-3 minutes.
4. Add Eggs and Vanilla:
Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
5. Alternate Wet and Dry Ingredients:
Gradually add the dry ingredients to the butter and sugar mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined; don't overmix.
6. Bake:
Divide the batter evenly between the prepared cake pans. Smooth the tops. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for a few minutes, then transfer them to a wire rack to cool completely.
7. Prepare the Whipped Cream:
In a chilled mixing bowl, beat the heavy cream until it starts to thicken. Add the powdered sugar and vanilla extract and continue to whip until you have stiff peaks.
8. Assemble the Cake:
Place one of the cooled cake layers on a serving plate. Spread a generous layer of whipped cream over the top of the first layer.
9. Add the Second Layer:
Gently place the second cake layer on top of the whipped cream layer.
10. Frost the Cake:
Frost the top and sides of the cake with the remaining whipped cream. You can use a spatula or piping bag for decorative designs.
11. Decorate:
Decorate the cake with fresh berries, chocolate shavings, or sprinkles, as desired.
12. Chill:
Refrigerate the cake for at least 1-2 hours before serving to allow the cream to set.
