Cream of Green Asparagus Soup
1. Heat the olive oil in a large stockpot over medium heat. Add the onion and saute for 4 to 5 minutes, or until tender. Add the asparagus and continue cooking for another 4 to 5 minutes, stirring often. Add the chicken stock and simmer for 10 minutes.
2. Pour soup into a blender and puree for 1 to 2 minutes, or until smooth. Return to the stockpot and stir in heavy cream. Bring to a full boil.
3. Place the butter and flour in the palm of your hand. Knead together to make a paste, or beurre manie. Whisk into the soup until well combined. Season to taste.
4. Serve hot, garnish with crab meat and asparagus slices.
