Perfectly creamy soup or mushroom gravy with chicken
Clean and slice the mushrooms.
Dice 1 small onion, approximately 1 cup.
Heat a large pan over low heat, adding your olive oil once the pan is warm.
Once the oil is warm, add the onion, mushrooms, salt, pepper and garlic. Stir well, cooking until the mixture is softened.
Stir in 2 Tablespoons of flour. Stir mixture until the flour is completely absorbed throughout.
Add chicken broth and cook until it has thickened slightly, stirring frequently.
In a separate container, mix the skim milk and 1 Tablespoon of flour. Add mixture to the pan once the broth has thickened. Add thyme. Stir frequently and cook until mixture has thickened again and serve.
