Heat olive oil in pan and sauté onions. Add sliced carrots and 1/2 cup of water. Cook until tender then set aside.
Place cream cheese in blender add carrots and a few spoon fills of the pasta water. Pulse until smooth and creamy.
Coat pasta with sauce and add parmasan cheese on top if desired.
