Creamy cheesy risotto
Heat butter in a medium saucepan over medium heat. Add onions and cook until translucent. Add orzo and cook 3 minutes, stirring constantly.
Stir in broth (1/2 a cup to 1 cup at a time) and bring to a boil.
Reduce heat and simmer, stirring occasionally and adding the rest of the broth periodically.
Once all liquid is absorbed (about 15 minutes), remove from heat.
Stir in cheese and add salt and pepper to taste.
Serve immediately.
